Description
Of the three beef tenderloin formats from Friboi, this 3 to 3.5 lb one is the smallest, built for anyone living alone, cooking for two, or wanting to try this cut without buying a large piece. It is still the same tender, lean tenderloin as always, just in an amount that is easier to finish without meat sitting in the fridge for days.
Features
- Piece weighing 3 to 3.5 lb, the most compact format of the cut
- Lean cut with very little fat
- Soft texture, well suited to individual portions
- Friboi brand, frozen at the time of packing
- A convenient size for one or two-person households
- Enough for two or three portions with little waste
It works well cut into two or three thick medallions and seared in a hot pan with a little oil and butter, finishing over low heat to the doneness wanted. It can also be cooked whole if a single piece to share for a dinner for two is preferred. Being so lean, it is worth watching the cooking time closely so it does not dry out. Being a lean piece, pull it off the heat as soon as it reaches around 125 to 133°F at the center, a few degrees before the final doneness, and let it rest three or four minutes before slicing. Given its smaller size, thaw it in the refrigerator for about 12 to 18 hours; the compact format does not need more time than that.
It arrives frozen as a single 3 to 3.5 lb piece, a size that fits easily into any freezer and does not call for planning meals several days ahead. It is a good way to work a premium cut into the weekly menu without buying more than will actually get eaten or leaving leftovers stored for days.
